Sourdough is still a carbohydrate-dense bread, with 49.7g net carbs per 100 g in this reference. A weighed 20 g piece contributes about 9.9g to a 20–25 g daily budget, which makes a small open sandwich easier to account for than an assumed full slice. Fermentation is not a deduction in this page’s net-carb calculation.

WHY IT'S NOT KETO-FRIENDLY
- Cut and weigh the bread before adding toppings. A thick bakery slice, a thin supermarket slice and an end piece can have very different weights even when each is called one slice.
- Toasting changes the texture and water content of a sourdough piece. Keep its original portion in your meal record instead of assuming a lighter toasted slice has lost carbohydrate.
- For an open sandwich, track the bread separately from cheese, meat and spreads. Toppings change the meal, but they do not cancel the bread’s contribution.
PREPARATION SUGGESTIONS
CHANGE THE SANDWICH FORMAT
Place the intended filling in lettuce leaves, or serve it alongside measured crackers. If retaining some sourdough, cut the portion first rather than trimming an already assembled sandwich by eye.
Better keto swaps
- Romaine Lettuce — 1.2g net carbs per 100 g (reference). Use whole leaves to hold sandwich fillings when a soft, crisp wrapper works; it will not have the chew of bread.
- Keto Crackers — 4g net carbs per 100 g (estimate). For cheese or spread, measured crackers can replace the bread base. The generic cracker estimate requires a check against the chosen brand.
